I grew up eating this soup. It is a hearty and will give you all the nutrients you need in one meal. I love things that are easy to make and nutritious and this is definitely one of them.
2 small onions (chopped)
5 cloves of garlic (or as many as you like)
1 tsp of olive oil
Stir fry these three ingredients together until the onions and garlic are browned. Then add in the rest of the ingredients.
1 bag of red lentils (washed)
2 cans of diced tomatoes or fresh tomatoes chopped
8 oz. carrots
1 quart of broth
1 quart of water
2 tbsp of cumin
1 tbsp Kosher salt
Let all the ingredients boil together and then reduce to a simmer for about 45 minutes until everything has cooked and is very tender. Use a hand blender to blend everything together until it is smooth and creamy. If it is too thick for your taste then you can thin it out with more broth until you get your desired consistency.
When you are ready to eat I usually squeeze a little fresh lemon over my serving.
This recipe is great for all those who have had or are planning on having bariatric surgery. Perfect for week 2 post-op.
